SCRAMBLE EGGS (tofu)


1 (14 oz) tofu, firm, water packed
2 green onions, chopped
¼ onion, chopped
1 ½ T nutritional yeast flakes
4 tsp Chicken Like Seasoning
¼ tsp garlic powder
1 ½ tsp onion powder
1/8 tsp turmeric

Rinse tofu in a cold water.  Mash tofu with masher or fork.  Mix with remaining ingredients.  Add olive oil into a hot nonstick skillet.  Add tofu mixture and reduce heat to medium.  Cook 5-10 minutes until water is cooked out and gives nice texture.  Very delicious!


BREAKFAST SAUSAGE PATTIES


2 c water
4 T soy sauce, unfermented
1 T olive oil
2 tsp turbinado sugar
2 tsp onion powder
1 tsp Italian seasonings
½ tsp garlic powder
1 tsp sage
1 tsp parsley flakes
2 c quick oats
½ c pecan meal

Mix all ingredients except quick oats and pecan meal in a medium saucepan.  Bring to a boil.  Add quick oats and pecan meal.  Cook until thickens.  Wait until the mixture cools off.  Make sausage patties.  Drop olive oil in a hot skillet and cook until nicely brown on both sides.  Yummy!


MINESTRONE


1 c soy curls or 2 c cooked garbanzo beans
5 c water
1 onion, diced
2 stalks celery, diced
2 carrots, diced
2 cloves garlic, minced
1 (16 oz) can tomato sauce
1 c whole wheat thin spaghetti, cut in 1” long
1 T Chicken Like Seasoning
¼ c soy sauce, unfermented
1 T nutritional yeast flakes

Put all ingredients in a large saucepan, and bring to a boil.  Reduce heat to low and cover.  Simmer for 20 minutes or until vegetables and pastas are cooked.  Yum yum!


BEAN SPREAD SANDWICHES


1 (16 oz) can fat-free refried beans
½ onion, chopped
½ celery, chopped
¼ c Tofu Mayonnaise (see below)
1 tsp onion powder
¾ tsp garlic powder
1 T nutritional yeast flakes
Whole wheat breads

TOFU MAYONNAISE:

1 pkg tofu, firm, Mori-Nu silken
¼ c soy milk powder
1 T lemon juice
½ tsp onion powder
1 tsp sea salt
2 T canola oil
¼ tsp garlic powder

TOFU MAYONNAISE:  Blend all ingredients until smooth.  Chill.
BEAN SPREAD:  Mix all ingredients except whole wheat breads.  Good in sandwiches, burritos, or dips.  Delicious!

 

 

TASTE OF HEAVEN MEATLOAF


2 c ground walnut gluten or any ground veggie meat
1 onion, chopped
2 cloves garlic, minced
1 c bread crumbs
½ c pecan meal
1 T soy sauce, unfermented
1 T nutritional yeast flakes
½ T turbinado sugar
1 tsp sage
6 T tomato sauce
1 T additional turbinado sugar

Preheat oven to 350 degrees.  Mix all ingredients in a large bowl except tomato sauce and additional turbinado sugar.  Transfer into a spray oiled 13x9 cookie sheet.  Shape into a loaf (about 9”x4”).  Set it aside.  Mix tomato sauce and additional turbinado sugar in a  small bowl.  Spread tomato sauce mixture over the meat loaf.  Bake for 40 minutes.  Garnish with parsely and cherry tomatoes before serving.  Very delicious!

POTATO SALAD


5 c potatoes, peeled, cut cubes & steamed
½ onion, chopped
½ carrot, finely grated
1 stalk celery, chopped
¼ c parsley, chopped
½ c lemon pickles, chopped
½ tsp sea salt
½ tsp dill weed
¼ tsp garlic powder
1 tsp onion powder
1 T nutritional yeast flakes
1 ½ c Tofu Mayonnaise

Put all ingredients into a bowl and mix together well.  Serve hot or cold.  Yummy!
