ENERGY FRUIT SMOOTHIE


1 ¼ c cranberry juice
1 apple, cut in chunks
1 pear, cut in chunks
1 banana, cut in chunks
1 ½ c frozen strawberry

Blend all ingredients until smooth!  Delicious!



ENERGY PANCAKES


1 c whole wheat flour
1 c unbleached white flour
¼ c soy milk powder
¼ c ground flax seeds
¼ c wheat germ
½ tsp sea salt
1 T Ener-G baking powder
¼ c turbinado sugar
2 ¼ c water
2 T canola oil
1 tsp vanilla

Mix all ingredients except water, canola oil and vanilla in a large bowl.  Add water, canola oil and vanilla.  Mix thoroughly.  Lightly oil skillet and heat on medium high.  When hot, pour ¼ cup portion of batter onto skillet.  Spread with bottom of measuring cup.  Flipping over when edges are cooked.  Pancakes should be nice golden brown.  Very delicious!



TASTE OF HEAVEN GRANOLA BARS


4 ½ c oats
1 c walnuts, finely chopped
½ tsp sea salt
2 tsp vanilla
½ c canola oil
½ c honey
2 T molasses

Put all ingredients in a large bowl and mix together well with the spoon then with hands.  Place mixture into oiled 9 x 13 cookie sheet.  Press down evenly and firmly with spatula.  Bake at 400 degrees for 13 minutes.  Turn half way around the cookie sheet and bake an additional 3-5 minutes.  Watch carefully.  Totally cool before cutting.  Delicious!



BROWN RICE MEATBALLS


2 c cooked brown rice
1 c bread crumbs
¼ c water
1/3 c pecan meal
½ onion, minced
1 T soy sauce, unfermented
¼ tsp sea salt
½ tsp garlic powder
1 tsp onion powder
2 T nutritional yeast flakes
2 T ground toasted sesame seeds

Mix all ingredients in a bowl.  Form balls by hand.  Drop 1 tablespoon of olive oil in a hot skillet.  Cook until brown.  Serve with your favorite spaghetti sauce or gravy.  Freezes wellYummy!



WALNUT MUFFINS


1 ½ c whole wheat flour
1 c chopped walnuts
1 c unbleached white flour
½ c lecithin granules
1 T Ener-G baking powder
1 ½ tsp sea salt
1 tsp coriander
¾ c turbinado sugar

1/2 c canola oil

2 c water
1 T vanilla
Extra chopped walnuts

Mix all ingredients in a large bowl except canola oil, water, vanilla and extra chopped walnuts.  Add canola oil, water and vanilla.  Stir together well.  Spray oil into muffin tins and fill it to the top.  Sprinkle chopped walnuts on top of each muffins. Bake at 350 degrees for 35 minutes.  Very delicious!



STIR-FRY NOODLES


1 c uncooked whole wheat spaghetti
1 T olive oil
3 cloves garlic, minced
½ onion, sliced
1 carrot, shredded
2 ½ c Napa cabbage, thinly sliced
2 green onions, diagonally sliced
2 ½ T soy sauce, unfermented
1 ½ T lemon juice
1 ½ T turbinado sugar
1 T nutritional yeast flakes
½ T sesame oil

Cut noodles in 1/3 length.  Cook noodles according to the package instructions.  Rinse, drain and set it aside.  Heat olive oil in a frying pan over high heat.  Add garlic, onion, carrot, Napa cabbage & green onions.  Stir-fry until vegetables are tender and crisp.  Add cooked noodles and remaining ingredients until noodles are hot.  Delicious!
