STIR-FRY CHICKEN & POTATOES


1 T olive oil
2 cloves garlic, minced
1 onion, thinly sliced
2 green onions, chopped
2 stalks celery, thinly sliced
1 carrot, thinly sliced
2 c soaked soy curls
2 c water
2 medium potatoes, cut in ½ inch cubes
2 ½ T soy sauce, unfermented
2 T nutritional yeast flakes
1 T paprika

Heat olive oil in a frying pan over high.  When oil is hot, add garlic, onion, green onions, celery & carrots.  Stir-fry for 2 minutes.  Add soy curls, and remaining ingredients.  Bring to a boil.  Reduce to simmer.  Cover and cook until potatoes are tender.  Very delicious!

 

STIR-FRY BROCCOLI


1 T olive oil
5 c broccoli, cut in small pieces
3 green onions, chopped
2 cloves garlic, minced
½ c water
1 tsp toasted sesame seeds
2 tsp nutritional yeast flakes
1 tsp sesame oil
1 T soy sauce, unfermented
1 tsp corn starch

In a large skillet over high heat, add olive oil.  When oil is hot, add broccoli, green onions and garlic. Stir-fry until broccoli is tender and crisp. Mix water and remaining ingredients in a small bowl.  Add this mixture into broccoli and cook until thickens. Serve with hot brown rice. Yummy!  

STIR-FRY PINEAPPLE


1 tsp canola oil
1 whole pineapple, cut in chunks
2 T turbinado sugar
2 T lemon juice
2 tsp parsley flakes
¼ tsp sea salt
2 T chopped peanuts

Add canola oil in a hot frying pan. Add all ingredients except chopped peanuts.  Stir-fry gently until pineapple is heated through (about 5 minutes) on high.  Transfer pineapple in a plate and sprinkle with chopped peanuts.  Very delicious!


STIR-FRY NOODLE (Lo Mein)


1 (12 oz) pkg brown rice spaghetti or whole wheat spaghetti
2 T olive oil
1 onion, sliced
1 carrot, match thin sliced
5 mushrooms, sliced
2 T parsley, chopped
2 cloves garlic, minced
1 T toasted sesame seeds
5 ½ T soy sauce, unfermented
1 T turbinado sugar
1 T nutritional yeast flakes
1 tsp paprika

Cut spaghetti in 1/3 (third) size, and cook according to package directions until tender.  Drain and rinse with cold water.  Drain completely.  Set it aside.  Pour olive oil into a hot large skillet over high heat.  Add vegetables.  Stir-fry until vegetables are tender.  Add cooked noodles, and remaining ingredients.  Mix and fry until the noodles are hot.  Delicious!

 

SESAME TOFU STIR-FRY


2 T toasted sesame seeds
½ tsp sea salt
1 pkg tofu, water packed, extra firm
1 T olive oil
2 c mushrooms, sliced
2 stalks celery, sliced
2 green onions, cut 1” long
½ c water
1 T chicken like seasoning
1 ½ T soy sauce, unfermented
1 tsp cornstarch
1 tsp paprika
1 T nutritional yeast flakes
1 T turbinado sugar

Combine sesame seeds and ½ tsp sea salt in a large bowl.  Cut tofu in 1” x 1” x 1” cubes.  Add tofu cubes to sesame seeds bowl.  Toss gently to coat.  Add olive oil in a large skillet over high heat.  Add tofu, stir-fry until tofu is golden brown.  While browning tofu, in an another large skillet, heat with adding 2 T olive oil.  Add mushrooms, celeries and green onions and stir-fry until crisp-tender.  In a small bowl, mix water, chicken like seasoning and remaining ingredients.  Add broth mixture to vegetables.  Cook until it thickens.  Add tofu, and toss gently to combine.  Serve with brown rice.  Very Delicious!


SPINACH RICE STIR-FRY


1 T olive oil
2 c spinach, chopped
1 carrot, chopped
2 cloves garlic, minced
2 green onions, chopped
2 c cooked brown rice
1 T soy sauce, unfermented
1 T toasted sesame seeds
1 T nutritional yeast flakes

In a heated large skillet on high, add 1 T olive oil.  Add spinach, carrot, garlic, and green onions.  Stir-fry until spinach is wilted.  Add brown rice and remaining ingredients and stir-fry until rice is hot.  Yummy!
