1/3 cup canola oil
1/3 cup honey
1 cup rolled oats
1 1/3 cup whole wheat flour
1 1/2 tsp coriander
1/4 tsp sea salt

Mix canola oil and honey in small bowl. Beat together with fork. Blend rolled oats into flour. Mix remaining ingredients in another bowl. Pour wet ingredients into dry ingredients and mix together well. Put dough on oiled spray cookie sheet (11 x 15) and flatten with hand. Cover with wax paper and roll out dough. Score 1" x 1 1/2". Bake at 350 degrees for 8-10 minutes. Makes 4 dozen.

 

Crackers

1 - 16 oz tofu, firm, water packed
1 cup bread crumbs
1/2 medium onions, finely chopped
3/4 cup black olive, finely chopped
1/2 cup pecan, or walnut, finely chopped
1 T soy sauce, unfermented
1/2 tsp garlic powder
1 tsp onion powder
2 T nutritional yeast flakes

Mix all ingredients together in a mixing bowl. Shape 2" x 1/2" sausage links. Place in a lightly oiled skillet, cook all around until golden brown. Makes 70 links. It freezes well.

 

Sausages

1 - 20 oz crushed pineapple in natural juice
1 1/2 cups frozen strawberries
1 - 12 oz frozen concentrate apple juice

Blend them until smooth. Very delicious!

 

Smoothie

1 cup gluten, chopped
5 cups clear noodles or rice noodles, cooked
1/2 onions, minced (optional)
1 carrot, minced
3 green onions, minced
3 cloves garlic, minced
3 T soy sauce, unfermented
3 T nutritional yeast flakes
2 pkg wonton wrappers (circle or square)

Chop the noodles in a food processor. Mix the remaining ingredients except wonton wrappers. Place 1 teaspoonful mixture in the middle of the wrapper. Wet with water on the edge of the wrapper. Fold it in half and seal it tight. Steam for 10-15 minutes or fry them until golden brown on both sides.

 

Eggrolls

15 corn tortillas
1 recipe HEALTHY NACHO CHEESE (recipe below)
4 cups vegetarian chili

 

Making layers in an oiled spray 9 x 13 baking pan, starting with layer of 5 corn tortillas, then a layer of vegetarian chili and a layer of the "Healthy Nacho Cheese." Continue in the same order for three layers. Bake at 350 degrees for 30 minutes. They are delicious!

 

HEALTHY NACHO CHEESE
1/4 cup raw cashews
4 oz. jar pimento
1 T lemon juice
3 T nutritional yeast flakes
1 tsp onion powder
1/2 tsp garlic powder
1/4 cup cornstarch
1 1/4 tsp sea salt
2 1/2 cups water

 

Bring 1 1/2 cups of the water to a boil in a saucepan. Liquefy the remaining ingredients including 1 cup of water in blender. Pour blended mixture into boiling water and continue cooking until thick. Serve over enchiladas, broccoli, pasta, baked potato, brown rice, toast, nacho chips, or anything you would use cheese for.

 

Enchilada

FILLING:

2 cups cooked red beans, drained
1/4 tsp sea salt
1/2 c honey or turbinado sugar


DOUGH:
1 cup whole wheat flour
1 cup unbleached white flour
1/4 cup lecithin granules
1/2 tsp sea salt
1 T soy milk powder
1/4 cup canola oil or olive oil
3/4 cup hot water

 

FILLINGS:

Run all ingredients through a food processor until smooth. Set it aside.


DOUGH:
Mix whole wheat flour, unbleached white flour, lecithin granules, sea salt, and soy milk powder in a bowl. Gradually add hot water and oil. Mix them well. Divide into 20 balls. Flatten and shape into 3" size circles. Put a tablespoon of the red bean mixture in the middle of the dough. Close and flatten into 3" size circle. Cook in a medium heat non-stick pan until brown on both sides. Delicious!

 

Red bean

1 pkg tofu, extra firm tofu, frozen, thawed
1/4 cup bread crumbs
1/4 cup whole wheat flour
1/4 cup nutritonal yeast flakes
1 tsp onion powder
1 tsp garlic powder
1 T soy sauce, unfermented
1/2 cup soy milk
1/2 tsp sea salt

Freeze tofu with container. Thaw completely and let water drain and pat dry. Divide into two portions in length and slice into 1 inch strips. In a small bowl, mix with bread crumbs, whole wheat flour, and nutritional yeast flakes. In another small bowl, mix remaining ingredients. Dip a sliced tofu in liquid mixture and coat with dry mixture. Cook in an oiled skillet until golden brown. Very delicious!

 

WHITE SAUCE
1/4 cup raw cashews
2 TBS corn starch
1 tsp sea salt
1 tsp onion powder
1/2 tsp garlic powder
1 TBS nutritional yeast flakes, opt
1/4 cup water
2 cups additional water

Blend smooth all but additional water. Pour additional water in a blender and blend a few more seconds. Pour into a sauce pan, lightly boil, stirring until thickened. (Served over brown rice, pasta, mashed potatoes, patties, or meat loaf, etc)

 

Tofu Chicken Strips

FILLING:

2 cups ground gluten or ground vegi meat
1 tsp paprika
1 tsp cumin
1/2 tsp garlic powder
1 tsp onion powder
sea salt to taste

MASA DOUGH:

1 cup corn meal
1 cup unbleached white flour
1 tsp sea salt
1 tsp onion powder
1/2 tsp garlic powder
1/3 cup canola oil
1 cup soy milk or vegi broth

CORN HUSKS: Prepare the Corn Husks the same way it is on the instructions.
FILLINGS: Mix all ingredients in a medium size bowl. Set it aside.
MASA DOUGH: Mix all ingredients by spoon in a medium size bowl.
Spread Masa Dough evenly over husks. Place 1 T of filling mixtures in center. Roll and place in a steamer. Cover and steam for 30 minutes. Freezes well. Very Delicious!
TEN THOUSAND ISLAND DRESSING

1 pkg tofu, firm, Mori-Nu silken
1/4 cup soy milk powder
4 T lemon juice
3 T turbinado sugar
5 T tomato sauce
1 tsp paprika
1 1/2 tsp sea salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 c + 2 T water
1/2 onion, finely chopped
1 T parsley flakes
Blend all ingredients except chopped onions and parsley flakes. Pour in a bowl. Add onions and parsley flakes.

Tamales

2 TBS active dry yeast
1 TBS honey
3 1/4 cups warm water
1 TBS sea salt
1 cup glutin flour
7 cups whole wheat flour
1/2 cup turbinado sugar, optional
1/4 cup canola or olive oil

Soften yeast and 1 TBS honey in warm water. Combine whole wheat flour, glutin flour, salt, and turbinado sugar. When yeast mixture rised, then add oil. Stir in dry mixtures. Knead until smooth about 10 minutes. Cover and let rise in a warm place until double (about 45 minutes). Punch down. Divide into 3 or 4 portions. Shape each into loaves. Let rise until double. Bake about 35 minutes at 350 degrees.

 

Whole Wheat Bread

1 firm tofu
2 cups any vegi meat, ground
1 cup bread crumbs
1/2 tsp sea salt
1 tsp garlic powder
1/2 TBS onion powder
3 TBS nutritional yeast flakes
1 TBS dry parsley
2 TBS turbinado sugar

Mash the tofu in a large bowl. Then add remain ingredients and mix them with hand. Roll into ball shape and bake at 350 degrees for 20 minutes and turn and bake another 20 minutes. Yield about 4 dozen.
