ZUCCHINI PATTIES

1 zucchini, slice 1/8” thin

Unbleached white flour

sea salt

1 recipe of Wet Batter Mix (see below)

WET BATTER MIX:

1 c unbleached white flour

¼ c wheat germ

½ tsp sea salt

1 ½ tsp onion powder

½ tsp garlic powder

1 T nutritional yeast flakes

½ T Ener-G baking powder

1 ¼ c water

Slice zucchini in 1/8” thin. Put single layer on a plate and sprinkle sea salt on zucchini on both sides. Set it aside.

Wet Batter Mix: Mix all ingredients in a bowl.

Zucchini Patties: Coat zucchini with unbleached white flour and dip into wet batter mix. Cook on an oil frying pan on both sides until golden brown. Delicious!

CABBAGE & CARROT STIR-FRY

1 ½ T olive

½ small cabbage head, shredded

1 carrot, shredded

2 green onions, chopped

½ tsp sea salt

½ tsp garlic powder

½ tsp onion powder

2 tsp nutritional yeast flakes

In a large skillet over medium heat, add olive oil. When oil is hot, add vegetables and remaining ingredients. Stir-fry until vegetables are tender and crisp. Stir occasionally.

TASTE OF HEAVEN CHILI

2 c cooked beans,

2 c any ground veggie meat

1 (8 oz) can tomato sauce

1 c water

1 T paprika

1 T soy sauce, unfermented

1 tsp ground cumin

½ tsp garlic powder

1 ½ T nutritional yeast flakes

Put all ingredients in a medium saucepan, and mix them well. Cook for 20 minutes on a medium heat. Stir often. Serve over brown rice or whole grain pasta. Very Delicious!

EGG-like SALAD

1 pkg tofu, firm, water packed

¼ tsp turmeric

¼ tsp sea salt

1 T nutritional yeast flakes

1 T Chicken-like Seasoning

¼ tsp garlic powder

¾ c Tofu “Miracle Whip” (see below)

GARDEN PASTA SOUP

1 c potatoes, cut ½” cubes

1 stalk celery, cut ½” sizes

½ onion, cut ½” cubes

1 carrot, cut ½” sizes

½ c cabbages, cut ½” sizes

1 ½ c water

½ c any whole wheat pasta

1 (8 oz) can tomato sauce

1 T soy sauce, unfermented

¼ tsp sea salt

1 tsp garlic powder

1 T nutritional yeast flakes

Put all ingredients in a large saucepan. Cook until tender (about 20 minutes). Yummy!

CAROB & WALNUT GRANOLA

3 ½ c rolled oats or quick oats

½ c wheat germ

¼ c carob powder

½ c walnuts

½ c unsweetened coconut flakes

¾ tsp sea salt

¼ c canola oil

¼ c honey

2 T warm water

1 tsp vanilla

Mix oats, wheat germ, carob powder, walnuts, unsweetened coconut flakes, and sea salt in a large bowl. Mix canola oil, honey, warm water and vanilla in a small bowl. Add liquid to dry ingredients. Mix thoroughly with hands. Put in 9 x 13 cookie sheets. Bake at 225 degrees for 2 hours. Very delicious!

WALNUT GLUTEN - VEGETARIAN MEAT

¾ c walnuts
1 c water
1 ½ c gluten flour
2 T whole wheat flour
½ tsp sea salt
½ tsp onion powder
¼ tsp garlic powder

BROTH:


5 c water
1 ½ T soy sauce powder or
6 T soy sauce, unfermented
½ tsp sea salt
1 tsp onion powder
½ tsp garlic powder
2 T nutritional yeast flakes

Blend walnuts and water on high until creamy. Mix remaining ingredients in a large bowl. Pour walnut liquid into the dry mixture, and quickly knead. Cut into 2 portions, and shape into loaves. Cut into ½” slices and drop into BOILING broth. Lightly boil for 30 minutes. It freezes well. Use it for meat substitute. BROTH: Stir all ingredients well in a large saucepan.
