WALNUT GLUTEN - VEGGIE BEEF


BROTH:

5 c water
¼ c unfermented soy sauce or 1 ½ T soy sauce powder
½ tsp sea salt
1 tsp onion powder
1 tsp garlic powder
2 T nutritional yeast flakes

VEGGIE BEEF:

1 c water
¾ c walnuts
½ tsp sea salt
½ tsp onion powder
½ tsp garlic powder
1 ½ c gluten flour

2 T whole wheat flour


BROTH: Stir all ingredients well in a large saucepan. Bring to a boil.

VEGGI BEEF: Blend water, walnuts, sea salt, onion powder and garlic powder until creamy. Mix gluten flour and whole wheat flour in a large bowl. Pour walnut liquid into the dry mixture, and quickly knead. Shape into a long log. Cut into ½” slices and drop into boiling broth. Lightly boil for 30 minutes. Delicious! It freezes well. Use it for meat substitute.

RICE & TOFU CASSEROLE
(High in Omega-3, High in Fiber, Gluten-Free)


1 pkg tofu, extra-firm, water packed
2 c cooked brown rice
1 c chopped walnuts
¼ onion, chopped
½ carrot, chopped
2 green onions, chopped
2 cloves garlic, minced
¼ c unfermented soy sauce
½ T onion powder
2 T nutritional yeast flakes
2 T lecithin granules

Cut tofu in small cubes, and put it in a large mixing bowl. Add remaining ingredients and mix well. You may serve COLD or put into an oil sprayed 13 x 9 baked dish. Garnish with chopped parsley before baking. Bake at 350 degrees for 30 minutes. Very delicious!!

BEEF-LIKE STEW


3 c water
3 med. Potatoes, cut in chunks
1 onion, cut in chunks
2 carrots, cut in chunks
2 stalks celery, cut in chunks
2 cloves garlic, minced
1 c walnut gluten, or any veggie meat
1 (8 oz) can tomato sauce
3 T soy sauce, unfermented
1 T nutritional yeast flakes


Put all ingredients in a large saucepan, and cook until all vegetables are tender (about 20 minutes). Very delicious!

OMEGA-3 COOKIES


½ c ground flax seeds 1 T Ener-G baking powder
1 ½ c quick oats ½ c chopped walnuts
¾ c oat flour ¾ c soy milk
2/3 c turbinaod sugar ½ c canola oil
½ tsp sea salt 1 tsp vanilla

Preheat oven to 350 degrees. Mix all ingredients except soy milk, canola oil and vanilla. Add soy milk, canola oil and vanilla. Mix thoroughly. Spray non-stick oil on the 9 x 13 cookie sheet. Drop onto cookie sheet by 1 tablespoon portion. Bake for 25 minutes. Makes 3 dozen. Very delicious!
